2017 Riesling From 40 year old vines planted on quartzite soils. Hand-harvested in late October , vineyard sorted, de-stemmed and spends 12 days on the skins. Spontaneous fermentation takes place in 1200L wooden barrels with natural yeasts from the grapes that lasts five months under temperature control. The wine spends 18 months on the lees with battonage occurring twice total while aging. Not Filtered.
